2 Cans Black Beans, rinsed and drained
1 C. Grape Juice
2 Cans Diced Tomatoes
2 Carrots, Grated
1 Purple Onion, Diced
1 Can Diced Green Chilis
2 t. Salt
1/2 t. Liquid Smoke
Saute' 1/2 onion, in a saucepan, in a small amount of olive oil. Add rest of ingredients, bring to boil and turn down to slow simmer for 20 minutes. Serve soup in bowl and sprinkle rest of onion on top of soup.
Add cooked brown rice, tortilla chips and guacamole' to complete this easy meal!
