Ingredient List:

Serves 8
 16 oz. dry angel hair pasta
 1/2 cup raw cashews
 1 pkg. Mori-Nu tofu
 1 cup water
 2 t. sea salt
 2 Tbs. olive oil
 1/2 chopped red onion
 1 cup fresh asparagus
 1 1/2 lemons, juiced and 1 Tbs. zest grated
 1/4 cup chopped parsley
 1/2 cup Fresh Chives

Directions

1. Cook linguine according to package directions in pot of boiling salted water.
2. Blend until smooth: cashews, tofu, water, salt and lemon juice
3. Saute onions and asparagus in olive oil. Add cashew/tofu mixture.
3. Drain pasta, reserving 1/2 cup cooking water. Add cream sauce, pasta, lemon zest, chives and parsley; toss to coat.
