Ingredient List
Serves 4
* 1/2 C. hoisin sauce
* 2 1/2 tsp. lime juice, divided
* 1 Tbs. tamari
* 1 tsp. arrowroot powder (healthy replacement for corn starch)
* 1 Tbs. coconut oil
* 1 1/2 Tbs. minced fresh ginger
* 4 cloves garlic, minced (4 tsp.)
* 1 8-oz. pkg. Tofu, cut into 1/2-inch cubes
* 1 12-oz. pkg. fresh or frozen whole baby green beans
* 1/4 cup toasted sesame seeds (toast in dry saute' pan for 3-4 minutes on medium high until brown, stirring to keep from burning)
Directions
Whisk together 1/4 C. hoisin sauce, 2 tsp. lime juice, tamari, arrowroot powder, and 1/2 cup water in small bowl. Set aside.
Bake tofu on small oiled cooked sheet in 350 degree oven for 30 minutes. Place baked tofu in a bowl with remaining hoison sauce and coat. Return to cookie sheet and bake for another 30 minutes, turning every 10-15 minutes to prevent burning.
Heat skillet or wok over medium heat. Add coconut oil, then ginger, garlic and green beens. Stir-fry 1 to 2 minutes, or until garlic turns pale gold and beans are crisp.
Add tofu and rest of hoisin sauce mixture to pan mixture. Cover, reduce heat to medium-low, and simmer 2-5 minutes, just until sauce begins to thicken. Stir in remaining 1/2 tsp. lime juice.
