4 C. Water
2 T. Lemon Juice
1/4 C. Nutritional Yeast
1 T. Corn Starch or Arrowroot Powder
2 t. Sea Salt
1 t. Garlic Powder
1 t. onion powder
Blend cashews in 2 cups of the water. Add rest of ingredients and blend very well until smooth and creamy. Pour mixture into saucepan and simmer for 5 minutes or so, stirring constantly to keep from sticking, until thick.
This can be used as a queso for chips, for cheese in lasagna, macaroni, broccoli and cheese soup, or anything else that needs a nice cheesy flavor. You can also add different spices to change the taste, such as chili powder or cumin for queso or basil and oregano for pasta dishes.
