
1 16 oz. Pkg. Frozen corn (better yet, 4-5 ears of fresh corn, off the cob)
1 C. Black Beans
½ red onion, chopped
1 red bell pepper, chopped
1-2 avocado, in chunks
2 cloves garlic, minced
1 T. Olive Oil
½ lemon, juiced
1 T. Braggs Aminos or light soy sauce
1 t. cumin
2 t. celtic sea salt
Combine all ingredients in medium size bowl, let set overnight to let flavors mix.
