Curried Cabbage Rolls
Ingredients:
3/4 of a cup of wild rice - dry
1 1/4 cups brown rice - dry
1/2 of a cup of soy beans - dry
1 medium carrot grated
1/4 cup celery diced finely
3 or 4 cloves of garlic crushed
1 large cooking onion chopped finely
2 tablespoon of fresh parsley flakes
2 tablespoon of Healthy Curry Powder
sea salt to taste
cabbage leaves, enough to make pockets for the filling
Directions:
Filling: Soak your rice and beans, (usually overnight for the wild rice). Cook the wild rice, brown rice and beans together. Add the remaining ingredients.
Wash then cook the cabbage leaves until they are soft
Add filling to cabbage leaves and roll.
Bake them in a casserole dish covered with your favourite tomato sauce, medium to low heat (350 degrees) until they are done (usually for about 20 minutes). They are done when the sauce in bubbling and the filling is hot. If they go into the oven frozen be prepared to wait for about an hour or more.
Serve them up and enjoy.
Best served with a fresh baked loaf of vegan bread, to soak up the extra sauce. Or you can make a nice Roti Bread! Keep an eye out for this recipe soon!
Serves: 8 servings times three or four rolls per person
